Pumpkin Bars

Pumpkin Bars
Ingredients:
3 eggs
1-2/3 cups sugar
1/2 cup vegetable oil
One 16-ounce can pumpkin
2 cups flour
2 teaspoon cinnamon
1 teaspoon salt
1 teaspoon baking soda
1/2 cup each: nuts and raisins
Ingredients for Icing
3 ounces cream cheese
1/2 cup butter
1 teaspoon vanilla
2 cups confectioners sugar
Bars: Combine all ingredients and spread in 13 x 9-inch greased and floured pan. Bake for 25 to 30 minutes at 350 degrees.
Icing: Beat all ingredients until creamy and thick. Spread on cooled pumpkin bars.
Makes: 18 bars

My aunt-in-law makes something similar but I don't have her recipe. I'll have to try this. I LOVE baking...wish I had more time.

And yes, I still talk to my food when I'm cooking. :)
